Ohhh, I love a snow day. Although snow days wreak havoc in my work world–cancelled conference calls, moved meetings, guaranteed late night making up for work that needed to happen–it also gives me a non-negotiable reason to spend the whole day lolling around with the kids. Not just hanging out, but hanging out with piles and piles and piles of snow everywhere!
There are two things that a snow day guarantees: SLEDDING, which promises exhausted kiddos and dog (yay!), and . . .
when the mittens and boots and snow pants come off . . .
MUFFINS!
We made super yummy! chocolate muffins on this day. I wanted to share the recipe with you:
Ingredients:
7oz semisweet chocolate
1/3 cup butter
3/4 cup milk
1/2 cup plain yogurt
1/2 cup white sugar
2 eggs
1 1/2 tsps vanilla extract
1 2/3 cup flour (I use unbleached all-purpose flour)
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips (optional)
1. Preheat the oven to 400 degrees F.
2. Melt the chocolate and butter together over low heat. I used a double boiler, which makes life easy. Let the chocolate/butter mixture cool (10 to 15 minutes).
3. In a medium sized bowl, lightly beat two eggs. Add the milk, yogurt, sugar, and vanilla to the egg bowl.
4. Stir in the cooled chocolate/butter mixture until blended well.
5. In a large bowl, mix flour, baking soda, and salt. Pour in the chocolate mixture, and stir until just combined. Stir in chocolate chips now, if desired.
6. Place liners in 12 muffin cups and divide the batter evenly into the cups. Lick the spatula.
7. Bake at 400 degrees F for 20 minutes or until a toothpick comes out clean from the center. Let stand for 5 to 10 minutes.
Best with a glass of milk, trust me!
